When a customer enters their credit card info in their portal, will it automatically show up under the customer payments tab?

Yes, it will as long as under Company General Integrations your Stripe or Authorize.Net merchant account is connect correctly.

Under Company > General > Features: you can also enable the feature: Customer: Portal Changes Create Open Tickets When customers creates or updates data within the portal, tickets will be created.
